Learn to make Mushroom Pulao Recipe – Mushroom pulao is a quick, easy and tasty dish made with white button mushrooms, basmati rice, aromatics and herbs. It is a handy recipe when you have little time or are tired to cook and yet long for comforting homemade food.

A super quick one pot meal with minimal preparation, minimal ingredients, and the use of a pressure cooker. Clarified butter or desi ghee makes a huge difference as they elevate the flavor of this otherwise humble dish. A complete meal for vegetarians and a great party recipe for a large gathering, serve it with raita.

This particular recipe tastes best when cooked on high flame in a pressure cooker. But you can also make it in a pan or rice cooker.

Mushroom, a source of meatless vegetarian protein lends a robust earthy flavor to the pulao. It is also rich in iron, potassium, magnesium and Vitamin D.

There are some variations to this recipe where along with the mushrooms, you can add some veggies like green peas, potatoes, carrots, corn, broccoli, cauliflower, capsicum (bell pepper) and baby corn.

Serve with Onion Raita Recipe for Biryani/ Pulao, any vegetarian curry or as it is.

STEP BY STEP MUSHROOM PULAO RECIPE INSTRUCTIONS WITH PHOTOS:
  1. Soak rice for 30 minutes.
  2. Heat ghee and oil in a pan. Add all ingredients mentioned under dry spices and cook for a minute.

3. Add chopped onion and cook for 3-4 minutes till it turns light golden brown.

4. Add mushrooms (chopped into quarters) and cook for 2-3 minutes.

5. Add ginger garlic paste, salt, garam masala and cook for 3-4 minutes till the raw smell goes away.

6. Cook till mushrooms are 50% done and tender. Add 1 1/2 cup of water, bring it to a boil and add soaked rice.

7. Mix well and add chopped coriander. Cook on high flame for 1 whistle. Turn off the stove and leave it for 15-20 minutes.

8. Serve hot with Onion Raita Recipe for Biryani/ Pulao or any curry.

Ingredients
  

  • 1 cup Rice Basmati
  • 2 tbsp Ghee
  • 1 tbsp Oil
  • 1 Onion
  • 200 grams Mushrooms
  • 1 1/2 cup Water
  • Salt to taste
  • 1 tbsp Ginger garlic paste
  • 1/2 tbsp Garam masala
  • Chopped coriander

Dry spices

  • 1 Bay leaf
  • 1 inch Cinnamon stick
  • 5 Cloves Laung
  • 4 Cardamom Elaichi
  • 1/2 tbsp Pepper corn
  • 1/2 tbsp Shah jeera

Instructions
 

  • Soak rice for 30 minutes.
  • Heat ghee and oil in a pan. Add all ingredients mentioned under dry spices and cook for a minute.
  • Add chopped onion and cook for 3-4 minutes till it turns light golden brown.
  • Add mushrooms and cook for 2-3 minutes.

  • Cook till mushrooms are 50% done and tender. Add 11/2 cup of water, bring it to boil and add soaked rice.
  • Mix well and add chopped coriander.
  • Cook on high flame for 1 whistle. Turn off the stove and leave it for 15-20 minutes.
  • Serve hot with raita or curry.

Notes

  1. Soak rice for 30 minutes.
  2. Chop each mushroom into 4 pieces.
