Thotakura fry

Learn to make Thotakura fry – Also called as Amaranth in english, Chawli in hindi, Mulai Keerai in tamil.

Amaranth leaves are a good source of Vitamin A, Vitamin C, folate. Rich in fiber, protein, antioxidants, calcium and iron. They help improve digestion, good for anaemics, reduce bad cholesterol.

It is among very few leafy vegetables which contain high amounts of calcium, making it a super food for boosting bone strength. When included regularly in diets, will keep the insulin levels under control.

This is an easy recipe made with tempering of red chilis, mustard seeds and dals with crushed garlic. Serve with steamed rice or dal rice.

STEP BY STEP THOTAKURA FRY RECIPE INSTRUCTIONS WITH PHOTOS:
  1. Heat oil in a pan. Add mustard seeds, dals, dry red chili and let it splutter.

2. Add tender Amaranth (Thotakura) leaves to the pan and cook for 2-3 minutes.

3. Then, add turmeric and salt.

4. Cook for 5-8 minutes till the leaves wilt and almost cooked.

5. Add chili powder and crushed garlic gloves. Mix well and cook for 2-3 minutes.

6. Serve hot with steamed rice.

Ingredients
  

  • 2 tbsp Oil
  • 1/2 tbsp Mustard seeds
  • 1/2 tbsp Urad dal
  • 1/2 tbsp Chana dal
  • 2 Dry red chilis
  • 2 Cups Amaranth leaves (thotakura)
  • 1/4 tbsp Turmeric
  • 1 tbsp Salt
  • 1 tbsp Chili powder
  • 3-4 Garlic pods Crushed

Instructions
 

  • Heat oil in a pan. Add mustard seeds, dals, dry red chili and let mustard seeds splutter.
  • Add tender Amaranth (Thotakura) leaves to the pan and cook for 2-3 minutes.
  • Then, add turmeric and salt.
  • Cook for 5-8 minutes till the leaves wilt and almost cooked.
  • Add chili powder and crushed garlic gloves. Mix well and cook for 2-3 minutes.
  • Serve hot with steamed rice.

Notes

  1. While cleaning the amaranth leaves, remove the fiber on the sides of the stalk.
  2. Choose tender amaranth leaves for this recipe.
