Heat ghee/ oil in a pan, add spices under tempering and let them splutter.
Add chopped carrot, beans, potato, and baby corn (I haven’t used it in this recipe) and cook for 2-3 minutes.
Add chopped tomatoes, salt, chili powder, masala powder and let it cook for 2 minutes.
Add soaked rice to the pan and fry it for a minute for rice to absorb the flavors.
Transfer it to rice cooker or pressure cooker and add required water (refer notes), mint and coriander leaves.
If using a pressure cooker, cook for the same amount of time required to cook normal rice (its 2 whistles for my cooker).
Garnish with coriander leaves and serve it with raita.
Notes
Soak rice for 30 minutes to get the perfect flavor.
I have used Basmati rice, you can cook it with regular white rice or brown rice. Just refer to the package instructions for water quantity and cooking time.
If using a pressure cooker, cook for the same amount of time required to cook normal rice (its 2 whistles for my cooker).
