Take 2 cups of whole urad dal in a bowl and wash it well.
Then soak it in 4 cups of water for 4-5 hours.
Drain the water completely and add soaked urad dal to blender along with green chili (refer notes), ginger and cumin seeds.
Grind to coarse paste without adding water. Once it blends well, add water gradually to achieve a thick paste like consistency. Now add salt and mix well (refer notes).
Heat oil in a pan for deep fry.
Grease hands with water and take a small portion of batter. Make a hole in the centre and shape garelu(refer notes).
Drop it into the oil and cook on medium flame till it turns golden brown on both sides. Drain onto a paper towel.
Serve hot with Peanut chutney, Coconut chutney or chicken curry.
Notes
Some people prefer to add chopped chili in batter instead of grinding it. Add chilis as per your spice tolerance.
Add water to the blender only after grinding the mixture to a thick paste.
Batter should be thick and should form a stiff peak when dropped.
Alternate method: Grease plastic cover with water and place a portion of batter on it. Make it into round shape with hole in the center.
Don’t grease hands or plastic cover too frequently as the batter might turn watery.
