Dondakaya Stir Fry (Tindora/ Ivy gourd)
Dondakaya stir fry is a very simple recipe cooked with very less ingredients. It can be served with steamed rice or dal rice.

Instructions
Wash the ivy gourd under running water and dry them completely. Chop dondakaya into small pieces.
Heat oil in a pan, add mustard, dals, red chili and curry leaves
Once the dals turn golden, add chopped dondakaya pieces with some turmeric. Let it cook for 15-20 mins.
Check if the pieces are cooked (you can cover and cook it to speed up the process), then add salt and chili powder.
Mix it well, add garlic and let it cook for 5-8minutes until the raw smell of garlic goes away.
Garnish with fried curry leaves and serve with steamed rice.
Notes
Crush garlic before adding in the curry to release flavors.
Serve it with steamed rice, dal rice or curd rice.
