Instructions
Wash the ivy gourd, remove the tips on both ends and chop vertically into 4 pieces.
Heat oil and deep fry the ivy gourd (Dondakaya /tindora) till they turn dark green brown. They should be crispy and soft.
Take a separate pan, add 2 tbsp oil (use the same oil from deep frying) and fry curry leaves until crisp. Set them aside for garnishing.
Add deep fried ivy gourd pieces, salt, chili powder and cumin powder and cook.
Add roasted peanuts and cook for 5 minutes.
Garnish with fried curry leaves and serve with steamed rice.
Notes
Dry roast peanuts.
You can stir fry the dondakaya pieces instead of deep frying but they take more time and are not as crisp.
Serve with steamed rice, dal rice or curd rice.
