Instructions
Heat 3-4 tbsp oil in a pan. Add red chilis, mustard seeds, urad dal and let them splutter.
Add onions, curry leaves and turmeric.
Cook for 3-4 mins till the onions turn translucent.
Add chopped carrot pieces to the pan. Cook for 15 minutes on medium flame.
Then add salt and cumin powder, mix well. Cook for 5minutes.
Now add chili powder and cook for 10-15 minutes till done.
Add shredded coconut and cook for 2 minutes till the raw smell goes away.
Serve with steamed rice or dal rice.
Notes
For 1 cup of chopped onions, use 2- 2 1/2 cups of chopped carrot.
You can use grated carrot instead of chopped for this recipe to cook it fast.
Adding shredded coconut gives coastal touch to the recipe.
