Instructions
Wash and let bhindi dry completely. Cut them into 2 inch pieces.
Heat 2 tbsp oil in a pan. Add bhindi pieces, fry them till they turn dark green brown and set them aside.
In the same pan add some oil and fry cumin seeds for a minute.
Add onions and fry till they turn transparent. Then add ginger garlic paste and fry for a minute.
Add tomatoes and cook for 3-4 minutes till it oozes oil.
Add red chili powder, turmeric and cook for a minute.
Take pan off heat, add curd, mix well and cook for 2minutes.
Add salt, cumin powder, coriander powder, cook for a minute and add water if necessary and let it come to a slight boil.
Add fried bhindi and cook for 5 minutes.
Serve with rice or roti.
Notes
If curd is not sour, add some lemon juice in the end for that tangy flavor.
Let bhindi dry completely after washing.
