Urad dal
Instructions
Wash the vegetables thoroughly and pat dry completely. Then peel and chop them into small pieces.
Heat oil in a pan, add red chilis, mustard seeds and urad dal. Let them splutter.
Add finely chopped onions, curry leaves and turmeric. Cook till they turn transparent.
Add chopped teasel gourd pieces and cook for 15-20 minutes.
Add salt, chili powder and cook for 5-8 minutes till completely done.
Add jaggery, mix well and turn off the flame immediately.
Serve with steamed rice.
Notes
Lightly peel the teasel gourd to remove bitterness.
Remove seeds if they are hard or ripe.
