Uthappam Recipe – Traditional South Indian Breakfast

Learn to make Uthappam Recipe – Uthappam is a South Indian breakfast that is similar to dosa and idli but with more vegetables. It is naturally vegetarian, vegan, gluten-free and makes for one of the healthiest breakfast options with very little oil.

Uthappam can be made with idli batter or by mixing both idli and dosa batters. You can add vegetables of choice like grated carrot, onions, finely chopped beans, beetroot, etc. to make a vegetable uthappam.

There are many variations you can do with the basic batter, but the basic, simple fermented batter is made with rice or idli rava and urad dal.

STEP BY STEP UTHAPPAM RECIPE INSTRUCTIONS WITH PHOTOS:
  1. Soak whole urad and rice in water for 4-6 hours or overnight.

2. Drain the urad dal and rice, add some water and grind it to paste using mixer or wet grinder.

3. Wash, drain and set aside rava (semolina). Refer notes

4. Add rava (semolina) to the urad dal batter, mix well, cover and set aside.

5. Ferment for minimum 8 hours or overnight. Take a big bowl and fill it only till 3/4th, as the batter rises after fermentation.

6. After its fermented, add salt and mix well.

7. Then add chopped onions, green chilis to the batter and mix well. Alternatively, you can add onions and green chilis as a topping after spreading the batter onto the pan.

8. Heat oil or ghee on a tawa or pan and spread the batter on to it. Spread the batter as per desired thickness and size.

9. Keep flame on medium to cook them well on the inside and crispy on the outside. Refer notes

10. Flip them and cook well on both sides.

10. Serve hot and crispy with Peanut chutney without coconut, coconut chutney or any pickles.

Ingredients
  

  • 1 cup Urad dal
  • 2 cups Rawa refer notes for alternative
  • Salt to taste
  • Water based on desired consistency to grind and required amount for soaking
  • Oil or ghee
  • 1 Onion chopped
  • 2-3 Green chilis finely chopped
  • 1/2 Carrot grated

Notes

  1. If you don’t have idli rava, there is another method to make soft idlis.
  2. While soaking urad dal, soak parboiled rice in a separate bowl for 4-6 hours. Add water and grind it separately to coarse consistency. Mix with urad dal batter and ferment it overnight. Rest of the recipe is same.
  3. Add salt only after the batter is fully fermented.
  4. Store the remaining batter in refrigerator. 
  5. You can add vegetables of choice to make vegetable uthappam.
